My mom developed this recipe as a way to reuse the spent grain from the brewpub my family founded. She sold the horse cookies at our local farmers market.

INGREDIENTS
1⁄2 cup grated carrots 2 cups cooked barley 1 cup cracked corn
2 cups rolled oats
2 cups oat bran
1 cup whole-wheat flour
1 1⁄4 cups apple juice
1⁄2 cup molasses, add more as needed 1 1/3 cups white flour

METHOD
Preheat oven to 350 degrees.
In a large bowl, combine all ingredients, adding more molasses if needed so that the mixture can be formed into 2-inch discs. Place on cookie sheets one inch apart. Bake cookies for 20 minutes, then rotate and cook for another 20 minutes. Let dry overnight before packaging.

Yields 30-32, 2 inch cookies
